Here is a recipe one of our favourite recipes for Healthy and hearty chicken soup. This not only tastes amazing, and has so many other associated health benefits.
Healthy and hearty chicken soup. Prep time 20 mins.
Cooking time: 1 hour
1 onion finely chopped 2 cloves of garlic finely chopped 2 carrots peeled and roughly chopped 3 celery stalks roughly chopped 2 bay leaves 3 Thyme stalks Fresh shitake mushrooms (Can use dried if you can’t find fresh) Broccoli Kale finely chopped 1 litre of high quality chicken stock. Preferably home made, but if you don’t have the time, I highly recommend Moredough kitchen’s premium chicken stock, which can be bought at most high end grocers and markets. 1 litre of water 4 chicken thigh fillets roughly chopped. Olive oil Salt Pepper
Method: Sweat the onion and garlic for a few minutes in olive oil. Add carrots, celery, mushrooms, bay leaves and thyme, and gently sauté for a few minutes. Add chicken, and cook for a few more minutes. Add chicken stock, and enough water to cover the vegetables and chicken, and bring to the boil. Season to taste. Simmer for approximately an hour until the chicken starts to break down. When it reaches this point shred the chicken and return to the pot. Add Kale, and broccoli and cook for 3 – 4 more minutes. Check seasoning and serve.
